      The way that cheese is made is by adding acids or acid producing bacteria to milk. This turns the sugars in milk into lactic therfore most cheeses are acidic,

      I think that parmesan is the most acidic cheese and cottage cheese is the least acidic

      Depends on the cheese but they’ll all be slightly acidic as its the acid that turns milk into cheese in the first place…
